I woke up this morning having dreamed about dessert potatoes. The weirdest thing was that I'd been making the dessert potatoes. It involved peeling and scoring a starchy white potato - I think it was a russet - before cooking it in a sugar water solution, with the next part of the dessert involving blueberries. When I woke up, I checked the internet, and while potatoes in desserts exist, from pies to cakes to candied versions, there didn't seem to be anything like what I was making. I think the gist of it was using the starches from the potato plus the sugars to make some kind of pudding or sweetened mashed potato type thing, with the blueberries as the main flavoring agent. Possibly as an add-in, possibly as a topping.

I've been thinking about it all day, and I'm not sure something if like that could work, just based on the chemical composition of various potato varieties, never mind mixing the starches and the sugars like that.

I know in addition to all the sweet potato desserts, there's chocolate potato cake and apparently, there's also blueberry potato cake. Nothing I've found involved the methods I'd employed last night, but maybe I shouldn't be looking to replicate it exactly, especially when I don't know enough about the chemistry to make the call one way or another. And definitely when I don't know how I'd even begin experimenting. Aside from trying to hack mashed potatoes to get them into the dessert realm.
