Every problem has a solution. Today's problem was not wanting to cook potatoes for dinner. The solution was throwing together the most haphazard risotto I've ever made.

The last cup of rice at the bottom of the bag. Some spinach I had in the fridge. Two finely diced large red onions I've had hanging around a couple weeks. A full bunch of fresh green garlic. A whole lot of sundried tomatoes. A tiny sprinkling of ghost pepper flakes. A full sampler packet of Penzeys's "sandwich sprinkle" blend. Water because there wasn't any broth around. Very much a "some of this and some of that" approach.

I followed what instructions I remembered from the dozens of times I've made risotto. Saute the aromatics, add the seasonings, add the rice. Let it get crisped and add liquid, a bit at a time. Keep on stirring and keep on going. I added a tiny bit of salted butter at the very end to tie it all together, which worked splendidly. I thought about adding some sharp cheddar at the end as well, which would've been delicious, but it was good enough it didn't need the cheese.

For reasons that don't need exploring at this juncture - maybe soon, but not right now - it was a tiring day. Too tiring for potatoes, but not for risotto. I can't parse out the distinction, but I'm pleased at what came of it.
