Tonight's cooking was lunch prep, making a wonderful sweep-the-fridge stir fry. I'd seen a couple recipes online for various dishes that looked good that made use of stuff I had around, and I went from there.

A small can of coconut milk and the last cup of vegetable stock, great for the rice. That bit of ginger I'd stuck in the freezer months ago. I went through the produce I had and figured I'd julienne the carrots, use up the onions, throw in the scallions and the red bell peppers. I didn't measure the rice cooking wine I added in and went with what looked right for the coconut amino acids. After I mixed the vegetables with the rice and the tofu, I added some rice vinegar to the liquid left in the pan and let that reduce before topping everything off, and drizzling a bit of sesame oil to tie it all together.

Then I almost was sorry I couldn't eat it for dinner. Almost, because lunch tomorrow is going to be great.
