This icon always makes me want toast.
I need some lunch advice. For the past several months, when I've needed to eat a lunch outside the house, I've had either sweet potatoes or butternut squash - cooked until it's soft and then mashed up with onions and herbs - and they're both tasty enough, easy to make in batches, and store in single-serving units of repurposed cottage cheese containers. Somewhat unfortunately, given how cheap these options are on a per-meal basis, I've gotten more than tired of them. Even more unfortunately, it's very difficult to find lunch options that take their place.
If anyone knows of foods which are fairly solid and store well in small units, like this tomato-leek quinoa that I'll be making for next week's lunches, I'd love to know. There's always pasta, but that runs the risk of the container tipping and sauce spilling, especially since I tend to carry my lunches on the bus which is always an unpredictable ride.
