Wine-drunk Thursday.

In planning this May, what's likely going to happen is cutting out one of the idealized legs of the trip. It's not a bad thing - it simplifies logistics tremendously - and I'm not that disappointed to have to make that call. Only mildly so.

Tomorrow I won't be doing any baking, which also mildly disappoints me. I'd done the Friday night challah for the last couple of weeks while my older brother was out of town, and it's a small point of pride that while he uses refined sugar, I use honey. It changes the density and moisture of the loaves, and it also adds significantly more flavor, especially if it's a honey with a strong flavor itself. Sourwood manages to carry through the rising and baking, and I'd hoped to try another variety to see how that would change things.

Then again, he travels far more than I do. The day might come soon.

Oh yes, honey in dough adds a lovely flavour, especially strong flavoured local honey.
